Baby Steps

I got on the manual elliptical this did it kick my bum...It's on my sun porch and it's barely above needless to say I was freezing!

I'm going to attempt each day to at least do 1 song on the treadmill, baby steps, this week and next 1 song, two weeks following...2 songs...and then maybe I'll attempt the manual treadmill!

Light Oat Bread

Light Oat Bread

This is my go to recipe for breadmaker bread

1 1/4 c. water
1 tsp. salt
1/2 c. rolled oats
1 1/2 tsp. yeast
2 T. unsweetened applesauce
3 c. bread flour (I've used unbleached all purpose too)
2 T. brown sugar

Add ingredients to bread machine. Make a well in the flour to add the yeast to. Set on Medium crust.

This recipe is from a friend of mine. The pre boiling is to remove some of the "gas" creating substances ;)

Lynn's Beans

1 pkg great northern or pinto beans
2 Tbsp. baking soda
Enough water to cover
1 whole onion, chopped to your liking

Boil until softened (about 1/2 hour)
Drain and rinse

Water to cover
2 cans of broth (or 2 c. boiling water with 2 Tbsp. bouillon...I used Ham)
1 chicken bouillon cube
1 beef bouillon cube

Bring to a boil, reduce heat and simmer until thick.

I'm sure with some ketchup and brown sugar these could easily be made into baked beans.

Sorry no NI, though when I did figure it out (lost my calculations) I came up with 8 servings at 1 pt each.



1 head cabbage, chopped up (312 cal)
1/4 c. Promise fat free spread (20 cal)
8 oz. spelt noodles (600 cal)
2 oz. 96% fat free cooked ham (120 cal)

Cook down the cabbage a bit on medium heat with about 1/2 c. water. Boil noodles. When noodles are ready add to cabbage with butter and ham. Cover and let simmer for 1/2 hour until cabbage is cooked down.

This is my take on my mom's old recipe...Yummy!

Well...I'm starting to make decisions for MY happiness, not worrying about everyone and everything else for once. I'm feeling better, got my son potty trained in 3 days and have been fairly OP for about 2 weeks now. I haven't been on the scale, but will soon, and also will post some new photo' taken by my 4 year old nephew! Oh and I almost forgot to mention, I've taken a leave from work, and some would say a leave of my senses... BUT I can have other careers, I only have one chance with my son!!! Money was nice, but the little rewards from the nidge are so much more rewarding!
